Whether it’s the pristine oceanfront views; the 42,000 square foot Eau Spa, with champagne, mini cupcakes and self-centered garden; or the Turkey Baco Sandwich, our little addiction; there are many reasons to love the Eau Palm Beach Resort & Spa. With each visit, our love continues, and we’re always trying to find a way to return. So, when we were invited in to Angle, their signature restaurant, for a special dinner prepared by Executive Chef Josh Thomsen and their new Chef de Cuisine Manlee Siu, we quickly cleared our calendar — and prepared ourselves for a feast to remember.
New to the team is Manlee Siu, a University of California and Le Cordon Bleu grad, who comes to Angle from Princeton, New Jersey where she worked at Agricola – an impressive farm-to-table restaurant that manages its own 120-acre farm – with Executive Chef John Thomsen. Her arrival is a sort of reunion for the powerhouse team and marks the start of a new venture together. On the menu, Siu will focus on what she describes as “contemporary American cuisine using locally-sourced and sustainable ingredients influenced by South Florida’s incredible bounty of produce, fresh fish, and honey, to name a few.” It’s what she calls “snout to tail, root to shoot and farm to table.”
While the Angle team is thrilled to have Siu join the team, we are just as excited, as our first experience with her and Executive Chef Josh Thomsen leading the way was perfection in every step. Friendly demeanor, farm fresh ingredients, unique flavor combinations, stellar service and the fact that every detail was this taken care of — makes our love for Eau Palm Beach continue to grow.

Trips to the Farmer’s Markets
With a menu that changes according to what is fresh, Siu actively seeks out the best local ingredients. Off hours, you will frequently see her exploring the local farmer’s markets or area farms, where she’ll get inspiration for the evening’s meal.
Seasonal Soups
If you’re not a soup person, you will be now, after you take a spoonful of chef’s seasonal soups. While I’m not usually a fan of chilled soup, I think my life has turned around, as this bowl of velvety goodness still has my palate dancing in delight. On the night of our dinner, we were treated to a bowl of the Green Cay Farm Corn Soup with crispy milk and chive oil. The sweetness of the corn, the luxurious texture, the ingredients just shined. If this is on the menu when you visit — it may or may not be according to what’s fresh that day — ordering it is a must do. You can thank me later.
Food Photography
If you’ve been following us, you know that we’re kind of addicted to food photography — and sometimes, we’ll try anything (well almost) to get that perfect shot. So while dining at the restaurant, I held up my plate to get better lighting, the waiter came over, stopped what he was doing and held up my plate, so that shot would be in the perfect setting. So, whether this was because he fully supported my addiction or just had awesome customer service, he certainly made my night.

If you’re looking to spend a special night out, look no further than the underlit onyx “Chef’s Table.” Located in the center of the dining room at Angle, this gorgeous set-up will bring your dining experience up one level — and the team at Angle will do everything they can to make that happen.

Not only will you be greeted with a glass when you check-in to the hotel or go in for a spa service, you’ll also be able to enjoy the large selection of wines, while dining at Angle.
