DB Bistro Moderne Miami just kicked off a new spring menu — and we’re just a little happy about that. That’s because not only did we get invited to dine at the restaurant, but we were spoiled with deliciousness, as well, with a variety of sweet and savory tastings from Chef Clark Bowen. The tasting was not just about the food and the wine here, it was about the entire experience.
Upon arrival, we were greeted with some boozy cocktails, sumptuous hors d’oeuvres and a plated dinner — yes, we were spoiled. Here are our favorites of the night.
5 Must Try Dishes at DB Bistro Moderne
Seasonal Cocktails
As much as we love farm fresh food, we love our cocktails, too and DB Bistro Moderne’s new seasonal cocktails are a perfect start to any evening. While these craft cocktails ranged from the Strawberry Caipirinha to the Bardot with gin, cucumber and yellow Chartreuse, our favorite of the evening was the Spring Thyme Shandy. This easy drinking cocktail, perfect for the warmer months, was a mixture of Ketel One Oranje, Ginger Lemonade, Hefeweizen and a sprig of thyme, giving it an aromatic punch.
Mushroom Flatbread
Yes, I agree, flatbread is over done I sometimes I wish it would just come off the menu, but your mind is about to change once you try Chef Clark Bowen’s savory mushroom flatbread. Take a crisp flatbread, slather it with a rich Béchamel sauce, top it with an ample amount of earthy mushrooms and leeks and you have the perfect bite that you’ll want to repeat it time and time again.
Corn Ravioli
If you’re going to try one item off the new menu, be sure to make it Chef Bowen’s Corn Ravioli. This luscious bowl of heaven may very well be the perfect bite and we are still singing its praises. Enjoying fresh sweet corn as a child in the heat of the summer still lingers in my food memory and this ravioli brought me back in time. The sweetness of the corn, the meatiness of the mushrooms, the crispy asparagus melded together with the corn nage in perfect harmony.
Strawberry Regliguese
Fresh fruit makes everything better, as can be seen in this Strawberry Regliguese made by pastry chef, Saeko Nemoto. Did you know that Regliguese actually means “nun” in French and reportedly dates back to the mid-19th century? This traditional French dessert made of two choux buns filled with crème pâtissière was given a modern and somewhat, Floridian twist. Nemoto added in grapefruit marmalade, thinly sliced strawberries and white chocolate ice cream — you can taste the sunshine.
Madeleines
A meal is not complete without a basket of warm madeleines – dusted with powdered sugar and straight from the oven. See them Eat them. Love them.
