Eden Roc Miami Beach has seen some changes over the past few months, one of which is their signature restaurant. 1500 Degrees is out and a garden-inspired dining venture called 15 Steps, designed by the hotel’s Executive Chef Mark Henry and Chef Jeremy Ford (who will run the kitchen at 15 Steps) is in. This new addition was named after the 15 steps necessary to grow a vegetable, catch a fish and cook the perfect steak.
Chef Ford will continue building upon Eden Roc’s standards of excellence, while keeping with his true passions — love for sustainable food & beverage practices. 15 Steps will bring farm-to-fork cuisine to the table showcasing an ever-changing menu that highlights seasonality, sustainability and regional produce. On site at Eden Roc there will also be a Sea Spray Organic Garden with fresh herbs (rosemary, sage, ming, etc) and vegetables (heirloom tomatoes, spinach, brussels sprouts, etc.). Because the garden can’t provide everything, Chef Ford has teamed up with area farms and local vendors to bring in only the finest USDA-certified grass-fed beer and organic produce.
15 Steps is scheduled to open up in December 2013.
